Thai Omlette

During my month in Thailand, back in 2019, eating street food was one of my favorite experiences and basically how I got all my meals. My all time favorite meal was a Thai omelette with sauteed morning glory. I have spent some time the last week perfecting my recipe, and am very happy with the outcome! It is delicious, especially with the prik nam pla on top - which by the way, is probably the best sauce you can put on just about anything, especially eggs! 

Omelette Ingredients

2 eggs
2 scallions, sliced (or a bunch of chives)
2 tsp fish sauce

Mix all the ingredients in a bowl. Heat oil to the smoke point and pour in the egg mixture. Fry until golden underneath, about 30-90 seconds. Gently flip the egg and fry until the other side is golden. Remove from the oil while straining as much as possible and serve over rice. Top with Thai chili flakes and prik nam pla!

Prik nam pla Ingredients

3 oz fish sauce
1 oz lime juice
1 clove garlic, smashed
6-12 red/green Thai chilis, sliced
1 tsp sugar

Combine all ingredients into a mason jar. Keep in the refrigerator up to a week.

This is a fantastic meal for breakfast, lunch, or dinner. Enjoy!
